You’d better make a double batch because these
disappear fast! Fortunately these are very easy.
1 cup peanut butter
1 egg
3/8 tsp Stevia
1 cup Maltitol
1/2 tsp salt
1 cup Almond flour
Heat oven to 350 degrees
Cream together all ingredients and form into a ball.
Chill dough for 10 minutes. When the ball is congealed
enough to cut, form into 24 balls and place on two ungreased
cookie sheets. Press down with a fork to flatten, first
in one direction and then in another. Allow room on the
cookie sheet for dough to spread between balls.
Bake for 8 –10 minutes. Allow to cool slightly then
transfer to a sheet of waxed paper to finish cooling.
Variation
Immediately after removing from oven put three semi-sweet
chocolate chips in the center of each cookie. This will
add less than a carb to a cookie. Or use the carb free
chips that are available. (Check resource page).
Total carbs = 40.5
24 servings = less than 2 carbs each
Total carbs with 3 semi-sweet chips each = 60.14
24 servings = 2.5 carb each
